Caliente (dish)
Caliente or kalinti is a savory pie consumed in Morocco. It is made of chickpea flour[1] and can include oil, eggs, spices, pepper, and cheese. It is typically sold by the slice by food vendors on carts in lower-income districts.
The dish allegedly originated in Spain;[2] a similar dish, flavored with paprika, has been described as one of the culinary symbols of Gibraltar by Hélène Jawhara Piñer.[3]
Etymology
The name of the dish comes from the Spanish term calentito, meaning hot.[4]
