From the earlier uncontracted form ܓܒܢܬܐ (gəḇentāʾ), from the root ܓ-ܒ-ܢ (ɡ-b-n) related to coagulating. Compare Arabic جُبْن (ǧubn) and Hebrew גְּבִינָה (gəḇînâ).
