kazan
English
Etymology
Borrowed from Russian каза́н (kazán), from a Turkic language, compare to Azerbaijani qazan, Kazakh қазан (qazan), Turkish kazan, Uzbek qozon.
Noun
kazan (plural kazans)
- a cauldron or cooking pot used in Central Asian cuisine
- 1990, Anya Von Bremzen, John Welchman, Please to the Table: The Russian Cookbook:
- A proper kazan also has to be well greased by constant use — it should never be washed with water, or, God forbid, actually scrubbed and scoured. The Uzbeks just wipe it carefully with an oiled cloth; and they will insist and I will second this — that the older the kazan, the better the pilaf.

Etymology 1
From Vulgar Ottoman Turkish قزان (qazan), from قزغان (qazɣan), from Proto-Turkic *kaŕgan. Compare Karakhanid قَزْغانْ (qazɣān, “excavated, dug out”), Chuvash хуран (huran, “boiler”), Hungarian harang, Kazakh қазан (qazan), Bashkir ҡаҙан (qaðan). Perhaps ultimately derived from Proto-Turkic *kaŕ- (“to dig, scrape, plane”), for which see kaz-.
