Compound of 焼き (yaki) + 魚 (sakana, “fish”). The former portion is the 連用形 (ren'yōkei, “stem or continuative form”) of the verb 焼く (yaku, “burn, grill”). The sakana changes to zakana as an instance of rendaku (連濁).
