It seems like you are forced to take a photo or video using the Instagram app, rather than uploading one from your camera roll. But once you know how to upload an existing photo or video, instead, the process is easy.

In the Instagram app, tap on the camera icon in the upper left corner.

Hold the screen and slide the screen up.

Generally, if you are posting them to your story you will need to do each one separately, or choose from Instagram's layout options that allow you to collage a few photos into one story. If you are making a feed post, then while selecting your photos, hold down on one of the photos to unlock the multiple photo feature. Then you should be able to choose up to 10 photos to post.
