From Satsuma Japanese 醤油 (そい, soi) [soj] (a variant of standard Japanese 醤油 (しょうゆ, shōyu)), from Old to Middle Japanese 醬油 (しやうゆ, shauyu), from Middle Chinese 醬油 (tsjàng-yuw), from 醬 (“bean paste”) + 油 (“oil”).
