Preparation
Shirdan is prepared by first washing the abomasum (lower stomach) of a sheep and then stuffed with three kinds of chopped meat, onions, and paprika, then further seasoned with black pepper, pimento and salt. Some water is added and then the opened cavity is sewn with a needle and thread. Then, it is baked with animal fat in an earthen casserole.
