These butter biscuits are great and fun to make; an excellent recipe to teach children cooking skills to make food that is good for them.

Preparation time: 1 hour
Cooking time: 10 minutes

Ingredients

  • 6 1/8 ounces (180 grams) soft butter
  • 7 ounces (200 grams) caster sugar
  • 2 large eggs
  • 14 ounces (400 grams) plain flour
  • 1 teaspoon (5 ml) baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon (5 ml) vanilla essence
  • Butter (for greasing)

Steps

  1. 1
Grease an oven tray with the butter. Sprinkle some flour over the butter and shake the tray to evenly coat it. The butter and flour prevents the biscuit dough from sticking while baking.
  2. 2
Mix the butter and sugar in a large bowl.

  3. 3
Mix two eggs in a small bowl and add the vanilla extract to it.
  4. 4
Slowly add the egg mixture to the sugar/butter. Avoid pouring everything at once since it'll make it curdle.
  5. 5
Get a separate bowl and mix the flour, salt, and baking powder in it. Gradually add this flour mixture to the butter mixture. Mix thoroughly so that there's no lumps formed from the flour and turns into a dough.
  6. 6
Take the dough out of the bowl and gently create a ball out of it. Divide the dough ball into two equal halves. Slightly flatten down each half and cover with cling film. Place both halves in the refrigerator for 30 minutes.
  7. 7
Preheat the oven for 350 degrees F or 180 degrees C.
  8. 8
Roll the chilled dough on a floured surface (such as a cutting board or counter top). Use a pallet knife to loosen up the dough. Create different shapes by pressing various cookie cutters (or pastry cutters) on the dough. Cut out the shape and place them on the baking tray. Leftover dough can be put into a ball and re-rolled for other shapes.
  9. 9
Bake the biscuits for 10 minutes or until golden brown.
  10. 10
Place the finished cookies on a cooling rack and dust them with icing sugar.
  11. 11
    Finished.
