Nepali cauliflower and potato tharkari (curry) that is good curry for lunch or dinner at home. This is a great vegetarian dish and a healthy option.

1Wash your vegetables and cut your cauliflower into half and potatoes into cubes. Depending on the size of the potatoes you can cut into four pieces or eight pieces. Chop an onion into small pieces.

2Put a large sized skillet on the stove and set the flame to medium heat. Pour 3 to 4 tbsp of cooking oil on the pan and add fenugreek seeds and the chopped onion to the oil. Sauté it for 2-3 mins until the onion is golden brown.Advertisement

3Add the chopped tomatoes and garlic - ginger paste to the skillet and saute it for another 3 minutes. Add 3 tbsp of water and cover it with a lid and let it cook for another 3 minutes.

4Add potatoes to the mixture and saute for 2 to 3 minutes and then add the cauliflower.

5Season the vegetables with all the spices listed in the ingredients. Mix the vegetables and spices well. Cover the vegetables and let it cook for another 2 to 3 minutes.

6Add 3 to 4 tablespoons of water and mix it well and put the lid on again and cook it for another 2 to 3 minutes.

7Run a spatula through the potatoes and if they are soft, then the vegetables are ready to be served.
