Damper is a traditional Australian bush bread, that was once cooked over an open fire. It's easy to make and has few ingredients. You can make damper at home in the oven. However, you can also cook damper over the fire when camping. Start with a basic damper dough and then cook it over the fire or in the oven.

- 4 cups of self raising flour (self rising flour)
- 1 teaspoon of salt
- 1 tablespoon of butter
- 1 cup of milk
- 1/2 cup of water

Making the Dough

1Stir the flower and salt together. To start, use a whisk or a fork to stir together the flour and salt. Keep stirring until you have an even mixture free of lumps. This should not take long as you do not have a lot of dry ingredients.[1]

3Add the milk and water. Use a spoon to carve out a small well in the center of the flour mixture. Gradually pour in your milk and water into the center of this well. Use the spoon to stir the flour, water, butter, and milk together.[4]
- Keep stirring until you have an even mixture. When you're done, everything should be mixed uniformly together. You should be able to easily handle and form the dough.

4Form your loaf. Lightly dust a surface, such as plate or cutting board, with flour. Set your dough in the center of this surface.[5]

- Take sharp knife. Use it to cut a criss-cross pattern across the top of your loaf of bread.
Cooking Damper in the Oven

1Preheat the oven to 425 degrees F (220 degrees C). You want to make sure your oven is warm enough to cook your damper. Set the oven to 425 degrees Fahrenheit (220 degrees Celsius) before setting your bread in the oven.[6]
