Put the cell phone on "auto answer."

Auto answer is when someone calls the number and it automatically answers without ringing. The location of this option vary by cell phone.

Plug headphones into the headphone port.

Leave the headphones attached while your phone is on the charger. This way, if you make a noise on the other end of the phone, it will be a tiny/very unnoticed noise.

Plug the phone into a charger in the area you want to record.

The phone should be charging near where the conversation is going to happen. You can leave the phone face down so nobody suspects anything, but it's better to hide it behind plants or somewhere inconspicuous.

Leave the room and act normal.

Don't act like you're up to something. If you have a suspicious expression on your face, then people may think something is going on.

Call the phone when you're ready to spy.

When you dial the phone number, the phone will answer automatically. Since nobody will hear it ring, nobody will know you're listening.

Listen to the conversation.

You can now hear the conversation. Try to stay quiet, and be especially careful not to press any buttons on the phone that could be loud enough for others to hear through the headphones.
